1 cup Basmati rice
7 to 8 almonds (roasted)
7 to 8 cashews (roasted)
1 tbsp pomegranate seeds
1-inch cinnamon (coarsely ground)
2 to 3 green cardamom (ground )
2 big cardamom
1 bay leaf
1/2 tsp Kashmiri red chilli
1 tsp saffron
1 tsp sugar
salt to taste
Ghee as required
- First of all, clean basmati rice and keep it soaked in water for half an hour.
After heating ghee in a pan on medium heat, add bay leaves, cloves, cinnamon, and big cardamom and fry it.
Now mix Kashmiri red chili, saffron, sugar, and salt in the standing spices and stir for a minute.
After that, mix the soaked rice with spices and fry it for 1 to 2 minutes.
After this, add 2 cups of water to the rice and keep the pan covered for 10 to 12 minutes.
When the rice is cooked, turn off the gas and take out the rice in a big vessel.
Now mix almonds, pomegranate seeds, cashews, and apples in cooked rice.
Kashmiri Pulao is ready. Serve with salad and raita.
