Ingredients 

Urad Dal - 1/2 cup

Sugar - 2 cups

Water - 1 cup

Food color - 1/2 tsp

Method 

First of all, soak the urad dal in water for 4 to 5 hours.

After about 4 to 5 hours, when the lentils swell well, then clean it by changing the water 2 to 3 times.

Now put two cups of sugar and one cup of water in a pan or pot for sugar syrup and cook it well till the sugar melts.

As soon as the sugar dissolves, add a little orange food color and mix it.

Then cook the syrup on a medium flame for another 5 minutes.

After cooking the syrup, turn off the gas and cover it and keep it aside.

Now add some water to a mixer jar and grind it very finely and make its batter.

After this, add a little orange food color to the batter.

Then beat the batter well by rotating the electric beater or hand in a circular motion for 5 minutes.

By beating the batter well, the tamarind will become puffy in oil and will absorb the sugar syrup well.

After whipping the batter, check it by pouring a little batter into the water.

When the batter starts floating on the water, then the batter for Imarti is ready.

Now put it in the nozzle or jalebi maker.

To fry Imarti, put oil in a flat surface pan or kadhai and heat it well.

When the oil becomes hot, then start making imarti in it,

first, make a big circle 2-3 times and simultaneously (without breaking) now make small balls on the edge of the circle.

Now reduce the heat and fry it till it becomes crispy.

After frying the Imarti, immediately put it in hot syrup and keep it immersed for 5 minutes

so that the Imarti absorbs the syrup properly.

Similarly, fry the whole batter by making imarti and then keep it dipped in sugar syrup.

Serve it hot or cold.
