Recipe: Make Brinjal Bharta in this style, the taste is such that you will keep licking your fingers!


Eggplant vegetable is liked by many people. It is prepared by roasting it and adding many vegetables and spices. The smoked and mashed eggplant is then cooked with onions, tomatoes, and spices.


2 large brinjals

2-3 cloves of garlic cut into thick slices

1-2 green chilies cut into 1-inch pieces

2 tbsp oil

1 large onion chopped

4-5 medium tomatoes

Half tsp Kashmiri chili powder (mild) optional

1 tbsp ground coriander

Half cup peas

salt to taste

2 tbsp coriander



Wash and dry the brinjals. Cut the brinjal into small pieces with a sharp knife.

Add slices of garlic and green chilies to the cut.

Fry them on an open flame till they become soft and burn completely.

- Let it cool down completely. Peel the skin from the eggplant and roughly chop the soft flesh.

- Heat oil in a wok or kadhai.

Add onion to it and fry till it becomes transparent.

Add ground coriander and chili powder. Fry for a few seconds.

- Add tomatoes and salt. Cook till tomatoes are soft and pulpy.

Add eggplant and peas and mix well. Cook on a medium flame for 8-10 minutes till the oil leaves the sides. Keep stirring at regular intervals.

- Serve hot garnished with coriander.
