Suji ka halwa is a traditional Indian dessert made of semolina and sugar syrup flavored with saffron and cashews. This halwa recipe is a perfect dessert for festivals and special occasions. That's why today we have brought its recipe for you. 

Ingredients

1 cup Semolina Semolina

¼ cup Ghee Ghee

⅓ cup sugar

2.5 cups water

4-5 green cardamoms

1 tbsp almonds

1 tbsp pistachios

10 saffron strands

Method

To make sugar syrup

- Heat a pan and pour 2.5 cups of water into it. After this, put ½ sugar in the pan and let it boil.

- Put a pinch of saffron and 3-4 cardamom in the middle of boiling water. When the mixture starts boiling, slow down the flame and let the syrup boil.

Switch off the flame after 5 minutes. If you want to save time, you can roast the semolina along with boiling the syrup. 

Roast semolina

Heat ¼ cup ghee in a pan. 

When the ghee melts and becomes hot, add half a cup of semolina to it. 

Keep stirring the semolina continuously so that semolina does not stick to the pan and cooks evenly. 

It is very important to roast the semolina on a low flame for 7-8 minutes, stirring continuously, until the color of the semolina turns golden brown.

How to make semolina pudding

When the semolina is completely roasted, add aromatic hot sugar syrup to it. 

- When you put liquid syrup in it, increase the flame and stir the semolina quickly. The semolina will absorb all the sugar syrup and become thick.

- Cook the halwa for 4-5 minutes and till the ghee starts leaving the pan. When it is cooked, turn off the flame. 

Sprinkle some almonds, pistachios, and saffron on the halwa and serve hot.
