Ingredients

For flour

Wheat flour 1 cup (16 tbsp)

Oil 1 tbsp

A pinch of salt

Water as required

For stuffing

Oil 1 tbsp

Cumin seeds 1 tsp

Fennel seeds 1 tsp

Turmeric 1/8 tsp

Vegetables 2 cups chopped (cabbage, cauliflower, carrots, etc.)

Coriander powder 1/4 tsp

Cumin powder 1 /4 tsp

dry mango powder 1/8 tsp

coriander 1 tbsp

boiled potato 1/4 cup (4 tbsp),

* Knead soft and pliable dough like we do for roti and keep it covered. Use warm water to knead a soft dough.

Boil and mash the potatoes and keep them aside

* Heat oil in a pan, add fennel/cumin and temper it and add chopped vegetables. Add ginger garlic paste and fry on low flame for a minute.

* Add turmeric, garam masala, red chili powder, salt, and coriander leaves and stir it on medium flame. Then add boiled mashed potatoes. Mix well.

* Cool the mixture and make balls of equal size. Make equal-sized balls from the dough as well. 

* First of all roll a ball of dough like we roll for roti and put the stuffing in the middle. Seal the stuffing by folding it in the center from all sides. Roll again to desired thickness. Use dry flour as needed while rolling the parathas. 

* Heat a tava (griddle) and sprinkle oil and cook on medium heat till it turns golden brown in color from both sides. Serve the paratha with raita or pickle or just like that.
