2 tbsp ghee

1/4 cup chopped almonds and raisins

750 grams grated carrot

1-liter milk

3/4 cup sugar

1/4 tsp cardamom powder

Heat a tablespoon of ghee in a heavy bottom pan, add almonds and raisins, and fry for a few seconds. Once done, take them out on a plate and keep them aside.

Add grated carrots to the same pan and turn the heat to medium-high. Fry the carrots while stirring occasionally for about two minutes.

Add milk and mix well. Let the carrots and milk cook for about 30 minutes on medium heat. Keep stirring occasionally to prevent milk and carrots from sticking to the bottom and burning.

After 30 minutes the milk will be reduced to half or a little more than half.

Continue cooking the halwa on medium heat in this manner until all the milk is absorbed by the carrots and you can see milk solids in the halwa on low to medium heat. This will take anywhere from 10 to 15 minutes.

After this add sugar to it. Once you add the sugar, the pudding will turn liquid as the sugar melts. Keep cooking the halwa till the sugar liquid is absorbed. Do not let the halwa dry out too much as it will continue to thicken as it cools.
