Ingredients-
Kidney beans - 1 cup Onion - 1 big size (chopped) Tomato puree - 2 cups Ginger-garlic paste - 1 teaspoon Green chilli - 2 (chopped) Cumin seeds - 1 teaspoon Red chilli powder - 1 teaspoon Dry mango powder - 1 teaspoon Turmeric powder - 1/2 tsp coriander powder - 1 tsp cumin powder - 1/2 tsp garam masala - 1/2 tsp Kasuri methi - 1 tsp coriander - 2 tsp (chopped) cloves - 4-5 cinnamon - 2 small sticks bay leaf - 1

Step 1
Soak it overnight a day before making Rajma. The next day, put kidney beans, bay leaves, salt and water in the cooker and cook for 6-7 whistles.

Step- 2
Now heat ghee or oil in a pan and add cumin, cinnamon and cloves to it. Then add chopped onion and fry it.

Step- 3
Now add green chilli and ginger-garlic paste and fry the onion till it becomes light brown. Then add tomato puree and mix.

Step-4
When the puree starts leaving the oil, reduce the flame and add turmeric, red chilli, coriander powder, garam masala, and amchur powder and mix.

Step-5
When the aroma starts coming from the spices, add boiled kidney beans to it and after mixing well, cover and cook for about 15 minutes.

Serve
Then add kasoori fenugreek and finely chopped green coriander to it and cook for a while. Perfect Rajma is ready. Now serve it with naan, roti or rice.
