You can make Aloo Tomato Sabzi without garlic and onion. This type of vegetable is mostly made in the Bhandara in the temples. The taste of which is quite different and looks great. 

To make Aloo Tomato Sabzi, you will need medium-sized potatoes, three red tomatoes, mustard oil, cumin, green chili, red chili, turmeric, salt, coriander powder, kasoori fenugreek, garam masala, green coriander, bay leaf, two Cloves, two to three black peppercorns, one big cardamom.


First, boil the potatoes. Do not boil it too much or else the taste will not come. Now wash the tomatoes and cut them into pieces. When the potatoes cool down, peel them and cut them into big pieces. Now heat mustard oil in a pan. When it becomes hot, first of all, add cumin and crack it. When cumin seeds crackle, add all the standing spices like cardamom, bay leaf, clove, black pepper, and big cardamom and crack it.


Now add green chilies to it. Then put the chopped tomatoes in the pan, And cover it. So that they get cooked easily. Then when the tomatoes start melting, add turmeric, coriander powder, and red chili powder and fry it. When it starts leaving oil, add potatoes to it. After cooking for some time add water. Let it cook covered for some time. Lastly add garam masala, kasoori fenugreek salt, and mix. Switch off the gas and add chopped coriander leaves and cover it with a lid. Delicious potato tomato curry is just ready.
