-200 grams of kidney beans (cut into chunks)
-2 tbsp gram flour
-4-4 small brinjals (cut in two) and baby potatoes (cut in two)
-1-1 raw banana and sweet potato (both cut into big pieces)
-3-4 green chilies (chopped)
-1/2 tsp asafoetida
-a piece of ginger (crushed)
-½ tsp each of carom seeds, turmeric powder, red chili powder, coriander powder, dried mango powder, garam masala powder, and sugar powder
-little coconut (grated)
-2 tsp oil
-juice of 1 lemon
-salt to taste
-2 tbsp cashew paste
-oil for frying
Add gram flour, oil, a little salt, and all powdered spices in a bowl and mix well.
Add water little by little and knead it.
Keep it covered for 5 minutes.
Make muthias by taking a little of the kneaded mixture with greased hands.
Heat oil in a pan and fry the muthias till they turn golden.
Mix all powdered spices, lemon juice, and cashew paste on a plate.
Fill this mixture with brinjal and potatoes. Heat 1 tablespoon in the cooker and sprinkle asafetida and carom seeds.
Add ginger and green chilies and fry them.
Mix bananas, sweet potatoes, stuffed potato-eggplant, cashew paste, gram flour muthia, and all the remaining spices and salt as per taste.
Add water as required and cook in the cooker for 3 whistles.
Then reduce the flame and cook for 5 minutes.
Switch off the flame.
Garnish hot Undhiyo with coconut and serve with roti or parantha.
