Food tips: Make veg cutlets at home today, this is the recipe!

Ingredients for making veg cutlets-

For pressure cooking:

*2 potatoes peeled and cut into cubes

*1/4 cup carrots, cubed

*1/4 cup beans, chopped

*1/4 cup sweet corn

*1/2 cup peas

*1/2 cup beetroot

*1/4 tsp salt

For cutlets:

*1/4 cup breadcrumbs

* 1/2 tsp Kashmiri red chili powder

*1/4 tsp cumin powder

*1/4 tsp garam masala

*1/2 tsp dried mango powder

*1 tsp ginger garlic paste

*2 tbsp coriander leaves, finely chopped

*1/4 tsp salt

*1 cup corn flakes, crushed

* Oil, for deep frying

For the Corn Flour Batter:

*3 tbsp corn four

*2 tbsp flour

*1/4 tsp black pepper, crushed

*1/4 tsp salt

*1/4 cup water

Method of making veg cutlet- 

First of all put 2 cups of water in the pressure cooker and keep a vessel. Then add 2 potatoes, 1/4 cup carrot, 1/4 cup beans, 1/4 cup sweet corn, 1/2 cup peas, 1/2 cup beetroot and 1/4 teaspoon salt in the pot.

Cook in a pressure cooker for 5 whistles without adding water to the vessel. Steam is enough to cook vegetables. Now filter the vegetables so that excess water comes out. Cool the vegetables completely. After this mash the vegetables completely. Now add 1/4 cup bread crumbs. You can alternatively use bread soaked in water. further, add 1/2 tsp chilli powder, 1/4 tsp cumin powder, 1/4 tsp garam masala, 1/2 tsp dried mango powder, 1 tsp ginger garlic paste, 2 tbsp coriander and 1/4 tsp salt.

After which mix well for kneaded dough. If there is too much moisture in the vegetable mixture, add more breadcrumbs. Now prepare a batter of corn flour by adding 3 tbsp corn flour, 2 tbsp all purpose flour, 1/4 tsp black pepper and 1/4 tsp salt. Then add 1/4 cup of water and make a smooth lump free batter and now take a ball shaped vegetable mixture and grate the hands with oil and roll it into a cylindrical shape. 

After this dip in the batter of maize flour and now crushed corn flakes/flakes have been crushed. coat with breadcrumbs. This is followed by a preheated oven at 180 °C for 15-20 min/min. Deep fry in hot oil. Stir occasionally and deep-fry on a medium flame till golden and crisp. Now finally serve veg cutlets with tomato sauce.
