Edible coating made by IIT Guwahati, tomato will last a month by applying it

Researchers at IIT Guwahati have developed an edible coating. With the help of this fruits and vegetables can remain fresh for two months. This coating is beneficial for farmers. Its information has been published in the journal ACS Food Science and Technology.

Researchers used edible coatings on fruits and vegetables such as potatoes, tomatoes, capsicum, strawberries, apples, pineapples, and kiwis. The shelf life of tomatoes increases by one month after coating.

Strawberries can last up to five days. But these strawberries can be eaten even after 20 days of coating. The edible coating consists of micro-algae and polysaccharides, a type of carbohydrate, said Vimal Katiyar, Professor, Department of Chemical Engineering, IIT Guwahati.
