-4 eggplants
-2 potatoes
-1 carrot
-french beans finely chopped
-ginger grated
-green chili chopped
-1 onion
-bread crumbs
-Coriander chopped
-mint leaves
-Garam Masala
-amchur powder
-oil for frying
-salt

How to make Eggplant Cutlets

  • First of all, to make eggplant cutlet, wash and wipe the eggplant, then cut it and keep it in a separate vessel. Now cut potatoes and French beans and carrots into fine pieces. Now heat a wok and add oil to it. Now put all the vegetables in it and fry it by adding salt. When the vegetables become soft after frying, then turn off the gas and take out the vegetables and cool them.
  • Now chop the onion and green chilies and add ginger and grind them all. Now mash all the vegetables which were roasted in a bowl, after that add green coriander, mint leaves, amchur, garam masala and mix it. Add salt to it. Make cutlet shaped cutlets and keep them in a plate. Now heat oil in a pan for frying. Till then, wrap the cutlets one by one in bread crumbs and fry them in oil till golden. Now serve it with your favorite chutney.
