-2 cups semolina

-half cup curd

-1 packet of fruit salt

-1 cup boiled potato masala

-1 tbsp besan

-1 tsp red chili powder


-a pinch of turmeric powder

-salt to taste

-oil for frying

Make a solution by adding salt, curd, and water as required in semolina.

Keep aside for half an hour.

Add the fruit salt and beat it.

Pour the batter into a greased mold and cook it in steam for 10 minutes.

When it cools down, take out the idlis from the mold.

Cut the idli into two pieces and make a little hollow in the middle.

Fill the aloowala masala and keep it aside. Prepare a thick batter by adding salt, turmeric powder, red chili powder, water, and chopped coriander as required in gram flour.


Heat oil in a pan, dip masala idlis in gram flour batter and deep fry them in hot oil till golden brown.

Serve with tomato sauce and green chutney.

To make boiled potato masala

Add salt, red chili powder, chopped green chilies, green coriander, coriander-cumin powder, mango powder, and chaat masala to 4 boiled potatoes as per taste.
