To make chickpeas
2 cups chickpeas (soaked)
1/4 cup boiled tea leaves
1-1 bay leaf and cinnamon stick
8-10 whole black peppercorns
2 green cardamoms
1 thick black cardamom
1 tsp cumin
3 onions and 2 tomatoes (both chopped)
2-2 tsp garlic-ginger paste
1-1 tsp turmeric powder, red chili powder, coriander powder, and cumin powder
salt to taste
Few green coriander (chopped)
To make bhatures
-2 cups flour
-2 tbsp oil (for moyan)
-half tsp yeast powder
-sugar and baking powder
-pinch of salt
-2 tsp curd
-water as needed
-oil for frying
In a cooker, add chickpeas, salt, and water as required and cook for 2 whistles.
Then reduce the flame and cook for 20 minutes.
Heat oil in a pan, add all the whole spices, and fry till golden brown.
Add onion and ginger-garlic paste and fry till golden brown.
Add tomatoes, salt, and all the powdered spices and fry till the oil leaves the pan.
Add boiled gram and tea leaves and cook till it becomes thick.
Serve garnished with green coriander.
to make bhatures
Mixing all the ingredients except oil for frying
Keep covered for 7-8 hours.
Roll out bhatura by taking a ball and deep fry it in hot oil till it becomes golden brown.
Serve with chole.
