Ingredients for making Eggplant Raita
To make brinjal raita, you will need 400 grams of fresh curd, small-sized brinjal four, green chili, black salt, salt as per taste, a pinch of asafoetida, green coriander finely chopped, half a teaspoon of roasted cumin, desi ghee or oil for frying the brinjal.

How to make Eggplant Raita
Cut and wash the brinjal into thin pieces. Then heat oil in a pan and fry the pieces of brinjal in it till golden brown. Also, keep in mind that it gets cooked. Now take out all these brinjals in a plate and keep them. Now beat the curd well. Then put fried eggplant in it. Together, mix black salt and plain salt and beat it. Also, add finely chopped green chilies and green coriander. Mix all the ingredients well and add the tempering to this raita. For tempering, heat ghee in a pan. Then add cumin seeds to this ghee and crackle it. When cumin seeds crackle, add asafoetida to it. Just turn off the gas. Pour this tempering hot into the raita. Similarly, you can prepare delicious brinjal chutney.

Ingredients for making Eggplant Chutney
To make chutney, you will need medium size eggplant, green chili, one teaspoon of cumin, and seven to eight cloves of garlic. Tamarind. Salt to taste, Coriander leaves.

How to make Eggplant Chutney
First of all, wash the brinjal and roast it by keeping it on the gas. When it is roasted well from all sides, take it down from the gas. Now grind cumin seeds, coriander leaves, garlic buds, green chilies, tamarind pulp, and salt according to taste in a mixer jar. Delicious roasted eggplant chutney is ready.
