Poha is a very healthy breakfast, especially for those who want to lose weight. So try this recipe to make it more healthy and tasty.
Poha - 2 cups, Water - 1 cup, Sugar - 1 tsp, Salt - 1/2 tsp
To make Green Masala
Coriander leaves - 1 cup, chopped mint leaves - 2 tbsp, curry leaves - 7-8, ginger chopped - 1 inch, green chilies chopped - 2-3, grated coconut - 1/2 cup, cumin - 1 tsp lemon juice - as per taste
For the tempering
Mustard seeds - 1/2 tsp, Onion chopped - 1, Cashews cut into two pieces - 2 tbsp, Groundnut peeled - 1 tbsp, Ghee or oil - 1 tbsp
Mix salt and sugar in a large bowl and let them dissolve well. Now put poha in it. Take care that the poha gets completely soaked in this water. After that take out the poha from the water.
After this, grind all the ingredients containing green spices in the mixer.
Now heat the oil in a pan. Fry cashews and peanuts lightly in this and take them out on a plate and set them aside.
In the same pan, add some more oil. Add mustard, and curry leaves tempering to it, then add onion and fry till it becomes golden.
After this, add the green spice paste and fry on a low medium flame for a minute. After this, it is the turn to mix poha with this spice. Mix lemon and salt on top.
Serve by adding peanuts and roasted cashews on top.
