Especially for sugar patients, because bitter gourd controls blood sugar. In such a situation, diabetic patients must eat bitter gourd. But if eating vegetables seems difficult. Ingredients for Bitter gourd Pickle
Half a kilo of bitter gourd, four teaspoons of mustard seeds, cumin seeds, fenugreek seeds, carom seeds, asafoetida, fennel powder, red chili powder, garam masala, vinegar, black salt, plain salt.

The bitter gourd pickle recipe
To make a bitter gourd pickle, first, wash and clean the bitter gourd. Then wipe it dry with a clean cloth. When the water of the bitter gourd dries up completely, cut off its stalk and remove it. Cut all the bitter gourds in a round shape and keep them in a vessel and mix salt in it. Add salt and leave it covered for half an hour.

Then wash the bitter gourd thoroughly in water. After washing thoroughly, place the bitter gourds on a cloth and leave them to dry. Now put a pan on the gas. When the pan becomes hot, reduce the flame. Add cumin seeds and fenugreek seeds and carom seeds together. Fry till it becomes light golden and takes it out from the pan and turn it on a plate. When all these spices cool down, grind them coarsely.

Once again heat the wok on the gas and add mustard oil. When the oil becomes hot, add asafoetida and bitter gourd. Add turmeric powder on top and stir and fry the bitter gourd. After frying for about four to five minutes, switch off the gas. Add all the coarsely ground spices and mix. Lastly add fennel powder, black salt, garam masala, red chili powder, vinegar, and salt as per taste and mix. The pickle is ready. Store it by filling it in a glass jar.
