1 kg melon peel (1 inch)
1 tsp ginger paste
3 finely chopped green chilies
pinch of asafetida
one quarter teaspoon cumin seeds
one-quarter teaspoon red chili powder
one quarter teaspoon garam masala
one quarter teaspoon turmeric
one quarter teaspoon mango powder powder
one tsp coriander powder
3 tbsp oil
salt to taste
2 tbsp finely chopped coriander leaves
- First of all, peel the green part from the melon peel and cut the white part into small pieces.
Heat oil in a pan on low heat.
As soon as the oil is hot, add cumin seeds and fry them well after adding asafoetida, ginger paste, green chilies, turmeric, and coriander powder.
Now add watermelon peel pieces and red chili powder and cook it while stirring vigorously for 2 minutes, so that the spices mix well in it.
After a certain time, add water and cook the peels by covering them for 10-15 minutes.
Every 5 minutes, keep checking it while stirring vigorously.
When the watermelon peels become soft then add garam masala, mango powder to the vegetable and turn off the heat.
- Vegetable of watermelon peel is ready.
Garnish it with coriander leaves and serve it with roti or rice.
