Raw papaya - 1/2 kg (grated), gram flour - 1/2 cup, cumin - 1/2 tsp, asafoetida - 1 pinch, red chili powder - 1/2 tsp, ginger - 1 piece (grated) , Green chillies - 2 (finely chopped), salt - as per taste, oil - for frying koftas
To make gravy
Onion - 2 (finely chopped), Green Chilli - 2 (finely chopped), Ginger - 1 piece (finely chopped), Tomato - 2 (cut into small pieces), Cumin - 1/2 tsp, Asafoetida - 2 Pinch, curd - 2 tablespoons, fresh cream - 2-3 tablespoons, turmeric powder - 1/2 tsp, red chilli powder - 1/2 tsp, coriander powder - 1 tsp, garam masala powder - 1 tsp, coriander leaves 3- 4 tablespoons (finely chopped), salt - as per taste, oil - 3-4 tablespoons
To make raw papaya koftas, first press the grated papaya with both hands and remove the water from it. Now mix papaya, gram flour, salt, ginger, red chili powder, cumin, asafoetida, and green chilies in a large bowl and mix well. Now heat oil in a pan. Now take about 2 teaspoons of the mixture to make small balls. When the oil is well heated, slow down the gas and fry the koftas in the oil till they turn brown. Likewise, fry it until it turns brown. Likewise, fry all the koftas.
Now make a fine paste of onion, green chili, and ginger to make gravy. Then make a fine paste of tomatoes too. Now take oil in a pan and add asafetida and cumin seeds. When the cumin starts crackling, add onion and ginger paste to it and fry it for four to five minutes. Now add tomato paste and fry it for one or two minutes. Now add turmeric powder, red chili powder, coriander powder, and salt and fry till the spices start leaving the oil. Now add fresh cream and curd to the roasted spices and fry them for about two minutes while stirring. Now, add water according to the thickness or thickness you want to keep the gravy and keep stirring the gravy. After the gravy starts boiling, let it cook for three to four minutes. Now add the already prepared koftas in the gravy and let it cook for a minute or two.
Now turn off the gas and add coriander and mix it. Serve it with hot roti, paratha, puri, or rice.
