Ingredients to make Stuffed Idli
One and a half cup semolina, one and a half cup curd, two teaspoons oil, two boiled potatoes, one finely chopped onion, along with finely chopped beans, capsicum, green chilies, green peas, a little ginger, turmeric powder, coriander powder, red chili powder, A spoonful of cumin, a little mango powder, salt as per taste.
How to make stuffed idli
To make the stuffed idli, whisk it with a thin paste of semolina and curd. Add 1 teaspoon salt in it. Keep it covered for half an hour.
To make potato masala, add oil to the pan and heat it. Sprinkle cumin seeds in it and then add onion, grated ginger, green chili. Fry the onions till they turn golden. Then add finely chopped beans, capsicum, green peas, etc. and fry it a little. Mix all the dried spices and also add turmeric, chili, and coriander powder. Now fry boiled potatoes and salt. Mix mango powder together and fry it well.
Add a little water to the idli batter and whisk it. Keep in mind that the batter should be thick. Take potato mixture in your hand and make a small Tikki from idli mold. Grease the idli mold with a little oil and add batter to it. After placing the potato tikkis in the batter, then put the idli batter on top of it. Just now cook this idli in steam and your delicious stuffed idli is ready. You can serve it with tomato sauce or coconut chutney.
