Method to prepare
- First of all, wash the carrot properly and grate it and finely chop all the dry fruits i.e. almonds, cashews, and pistachios. Grind the cardamom well.
- Then put a carrot on the gas and put carrots in it and fry it well for a while. When the carrots fry, add sugar to it and cook while stirring continuously on medium flame. After 2 minutes the sugar will start to melt and the carrots will start coming out of the water.
- Keep stirring it till the water becomes dry and keep it on medium flame. Then add coconut brown and chopped cashews, almonds, and pistachios and mix well. Then add condensed milk and cook it after mixing for 5 minutes. Turn off the flame when it starts to dry.
- Then put a little bit of ghee on a plate and spread this mixture and put it on it. Put chopped cashews and almonds on top of it. Leave it to cool for a while. After cooling, cut it into the shape of barfi. Your tasty and healthy carrot barfi is ready. Condensed milk is very sweet along with carrots. If you like light sweet, you do not need to add sugar to it.
