It's unfeasible to think of Italian food lacking a warm plate of pasta. Ended with flour, pasta can be bent into sheets, strips or any other shape. There's no denying the fact that it is with no trouble the ultimate comfort food. Pasta dishes are an easy way to give pleasure to even the choosiest eaters. It may seem simple, but sometimes it may leave you with lumpy and limp results. Use adequate amount of water to avoid sticking. But really it is easy and simple to make it. Also it is very yummy and completes our hungriness. So here are some delicious and easy recipes of it:
Ingredient: 1 cup macaroni(pasta), 12 cherry tomatoes, 1/2 cup milk, 1 sprig rosemary, 1 sprig thyme, 1 spring onion, 2 cloves garlic, 10 gms chopped onions, 10 gms chopped leeks, 10 gms chopped celery, 1 bay leaf, 60 gms butter, 30 gms flour, 1 pinch white pepper, 1/2 tsp nutmeg grated, 15 gms parmesan cheese, 20 gms cheddar cheese, 15 gms brie cheese, 20 gms Swiss emmental cheese, Pinch of chilli flakes
Method: Boil the macaroni in salted water.
After boiling strain and put in a bowl with olive oil.
Melt the butter with flour in a saucepan along with olive oil.
Boil some milk with rosemary, thyme, bay leaf and spring onions.
Strain the milk in with the flour and butter, whisking slowly.
Make sure you keep stirring the sauce.
Season with salt and pepper.
Once the sauce coats the back of your spoon means it's done.
Grate parmesan, add cheddar, some chunks of brie and emmental.
Put in the sauce and mix it in.
In a hot pan add some slice garlic, cherry tomatoes, chilli flakes and a pinch of salt.
Saute well and deglaze with a touch of white wine.
Mix the macaroni with the sauce and serve.
Ingredient: 1 packet spaghetti, 100 g bacon, cut in strips, 3 eggs, 1 egg yolk, 100 g Pecorino Romano or Parmesan – grated, 1 Tbsp olive oil, Lots of black pepper – coarsely crushed
Method: In a large pan or a saucepan, heat the olive oil and fry the bacon till crisp. Set aside.
In a mixing bowl, beat the whole eggs and the yollk well. Stir in the grated cheese and set aside.
Boil the spaghetti in abundant salty water. Drain the pasta, reserving some of the cooking water.
In another saucepan, toss the pasta with the egg mixture, bacon and any fat rendered from cooking the bacon, over very low heat.
Make sure that the individual strands of pasta are all coated properly with the mixture. Season with salt, add the pasta water, give it a quick toss, and remove right away from the heat.
The sauce should have a creamy texture, which will be lost if the pasta remians on the fire for too long.
The idea is to cook the egg with the heat of the pasta, and not with the heat of the fire and serve it.
Home Style baked Pasta:
Ingredient: 200 gm any short pasta, 2 Tbsp olive oil, 1 medium sized onion, chopped, 1 Tbsp minced garlic, 1 cup mixed bell peppers, 1 cup sliced mushrooms, 1 cup spinach, blanched, chopped, 1 medium size eggplant, 1/2 cup mixed olives, 1-2 green chillies, chopped, 1 cup tomato puree, 2 cups grated mixed cheese, 1 cup cream, 1/2 cup breadcrumbs, 150 gm butter, cut into cubes
Method: Cook the pasta in boiling salted water for about 9 to 11 minutes.
Drain and lay on to a tray/plate.
In a heavy bottomed pan, heat up some olive oil.
Add the onions, garlic, chillies and saute them for 2 minutes.
Add the bell peppers and eggplant and saute for 2 minutes followed by the mushrooms, olives and the spinach.
Let this cook for 5 minutes. Then pour in the tomato puree and the cream.
Season to taste. Take the pan off the stove and mix in the pasta.
Then mix in half the cheese. Pour the mixture into a greased baking dish.
Sprinkle the rest of the cheese evenly topped with the breadcrumbs. Add the cubes of butter over and let it bake in the oven for 20 minutes at 160-180 degrees.
