Some easy and delicious tomato soup recipes


Tomato is good for health. According to doctors eating tomato in daily diet will increase hemoglobin in blood and plays an important role in human diet and also helps to remain fit and healthy. So here are some easy and healthy recipies:

Creamy Tomato Soup Recipe

Ingredients: 800g tomatoes, chopped, 2 onions, chopped 4-5 garlic cloves, crushed, 1 carrot, grated, 2tbsp tomato puree, 400ml vegetable stock, 2-3 sticks of celery, chopped, 4tbsp cream, 2tsp paprika, 2tbsp Olive oil 

Toppings: Salt to taste (if needed), Cheese/bread toasties, to serve 


 In a pan cook together the onion, carrot, garlic and celery in Olive oil till soft. 
Then add the paprika and cook for about five minutes and add the puree and the vegetable stock. Let it simmer for 15 minutes or until the vegetables are cooked and soft. 
Let it cool for some time then in a blender blend the cooked mixture. When completely blended add the cream and blend again. 
Serve hot with the Toppings.

Roasted Garlic and tomato soup recipe:

Ingredients: Tomato 8 medium, Garlic 1, Oil 2 tablespoon, Onion chopped 1 medium, Bay leaf 1, Salt to taste, Fresh thyme 2 sprigs, Tomato puree 1/2 cup, Basil leaves 10-12, Crushed black peppercorns to taste, White bread slices 1Basil oil to drizzle


Cut tomatoes into big pieces. Cut off a thin slice from the bottom of the garlic bulb. Keep it in a bowl, drizzle some olive oil and sprinkle salt over it, place the bowl in a hot oven and roast till well browned.

Heat 2 tbsps olive oil in a non stick pan, add onion, tomatoes, bay leaf and salt and mix. Peel some of the garlic cloves and add to the pan, add the remaining bulb as it is. Add thyme and 1 cup water and let it cook.

Add tomato puree and mix. Add basil leaves, crushed peppercorns and mix. Cover and cook for 10 minutes or till the tomatoes become soft. Strain and reserve the stock. Remove thyme and the garlic bulb from the solids. Cool it and grind it to a puree with a little water. Add bread slice and grind it again.

Pour the strained stock and the puree into the pan. Adjust salt and bring it to a boil. Pour the soup into soup bowls and serve piping hot garnished with basil leaves or basil oil.

Macaroni and Tomato Soup:

Ingredients:1/4 cup Boiled Macaroni, 2 medium Tomatoes, 1 tablespoon Butter, 2-3 cloves Garlic, 1 small Onion, 4 tablespoons Tomato puree, 5 Cups Vegetable stock, Salt to taste, Black pepper, 8-10 Basil leaves 


Boil the macaroni as directed on the pack and keep aside for later after straining the water.

Chop the tomatoes and onion and crush the garlic cloves.

Now heat the butter in a deep pan and sauté the garlic, onion and tomatoes in it.

Cook them well for about 5-8 minutes and after this add the tomato puree.

Cook everything well. When the puree is cooked and blended well with the other ingredients, pour the vegetable stock, salt and black pepper and boil everything well for about 3-4 minutes.

Right before serving, add the macaroni and garnish the dish with basil leaves. Serve hot to the delight of your guests.
