Recipe of Spaghetti with chicken meatballs with grilled mushrooms and broccoli


For non-vegetarian lovers, here is the recipe of Spaghetti with chicken meatballs with grilled mushrooms and broccoli. Follow every step properly and enjoy this delicious dish with your family or friends.

Ingredients (For the chicken meatball):
• Chicken breast mince………150 gms
• Lime juice……………. ½ litre
• Finely chopped garlic clove……… 1
• Few sprigs of fresh oregano
• Chilli flakes (optional)……… ½ tbsp
• Olive oil…………. 1 tbsp
• Grated parmesan cheese…………. 1 tbsp
• Egg white………… 1
• Salt and pepper to taste

For the grilled veggies:
• 40 gms mushrooms, cut into quarter,
• 40 gms broccoli, cut into florets and blanched
• 1 clove of garlic, finely chopped
• Cooking oil spray
• Salt and pepper to taste
• 50 gms whole wheat spaghetti/ gluten free pasta, cooked as per the packet instructions

For the pasta sauce:
• 3 medium-sized tomatoes remove the core and puree it with a pinch of salt
• ½ onion, finely chopped
• 2 cloves of garlic
• A few sprigs of fresh basil leaves, shredded
• 1 tsp. olive oil
• Salt and pepper to taste.
• Grated Parmesan cheese for garnish

• At 180 °C, preheat the oven. Mix all the ingredients together in a large bowl for the chicken meatballs, and mix it well. After doing this, divide the mixture into 6 equal sized meatballs. Place them on a lined baking sheet and add it to the oven for 7-8 mins.

• Heat oil in a saucepan to make the tomato sauce. Then add the garlic and onions and cook it till its fragrant for 1-2 mins. Do not brown the onions. Add the tomato puree and bring it to a heat to get it thicken slightly for about 8-10 mins. Add salt and pepper for the seasoning. Add the shredded fresh basil leaves before finishing it off. Stir it and then remove the sauce off the heat.

• For grilled veggies, heat a pan/grill and coat it with the cooking spray. Add finely chopped garlic and toss in the mushrooms. Add the broccoli after cooking the chopped garlic and mushrooms. Again toss it well. Season it with salt and pepper. Take it off the fire and stir in the cooked whole wheat spaghetti or gluten free pasta, add a spoonful of the tomato sauce and coat it well.

• Place the pasta and veggies in a pasta dish, add the meatballs over it and pour some tomato sauce.

• Garnish it with grated parmesan cheese and basil leaves. Serve the dish and enjoy!
