Small bowl of coriander leaves
3 cloves garlic
1 small piece ginger
3 green chilli
2 tbsp coconut powder
½ cup water
1-2 tbsp Ghee
1 tsp jeera
½ tsp black pepper
1 tej patta
1 inch cinnamon stick ( dalchini)
10 cashews cut half
½ onion, thinly chopped
1 tomato, finely chopped
½ potatoes finely diced
5 beans, chopped10 florets cauliflower (Gobi)
1 cup peas
1 carrot, finely chopped
1 cup basmati rice, soaked in water for 20 minutes
2 cups water
Salt to taste
Pudina masala paste:
Firstly, in a blender take pudina and coriander leaves than add Garlic, Ginger and green chilli into it.
Then add few slices of onions and coconut powder top it up by adding water and blend it into smooth paste.
Pressure cook pulao:
Start with heating ghee in a cooker, add cumin seeds and other spices, sauté them on medium flame till they turn aromatic.
Then, add cashews and sauté till they turn golden brown, Further add sliced onions and sauté.
Now, add chopped tomatoes and Other Veggies.
Further, add prepared Pudina masala paste and saute.
Then add the pre-soaked basmati rice and sauté them gently without breaking the grains.
Then add 2 cups of water and further add salt to taste.
Give it a well mix and pressure cook for 2 whistles on average flame.
After the 2 whistles, turn off the flame; transfer the rice from cooker to a serving bowl!
Garnish the Rice by placing some coriander levees on top and serve hot.
