Ingredients Of Kathal Biryani-

500 gms Basmati rice

500 gms raw jackfruit

2 tsp red chilli powder

2 tsp turmeric powder

1 tsp dhaniya powder

1 tsp besan

2 cups yogurt

250 ml oil

2 tsp ginger & garlic paste

2 cinnamon sticks

1 bay leaf

3-4 cloves

3-4 green cardamom

2-3 mace

2-3 green chillies

15-20 mint leaves

10 gms saffron

salt

2 garlic cloves

1 tsp red chilli powder

1 tsp roasted cumin

Steps to Make Kathal Biryani-

  1. For almost 40 mins, soak the rice till they get soft.
  2. Prepare a mixture of chopped raw jack fruit, salt, red chili powder, turmeric powder, coriander powder and besan.
  3. Depp fry it by adding some water in it.
  4. Now, add red chilli powder, turmeric powder, ginger & garlic paste, cinnamon sticks, bay leaf, cloves, green cardamom, slit green chillies, mint leaves, salt in a bowl of yogurt.
  5. Mix it well.
  6. Then, marinate fried jackfruit in this mixture.
  7. Par boil rice with salt, green cardamom & oil.
  8. Strain the rice & layer the biryani. Add saffron, oil & drained rice water to it & cook for 10 minutes.

For Raita-

  1. Add browned garlic, red chilli powder & roasted cumin to yogurt & mix well.
