Gooey Chocolate Coconut Muffins

The cuisine of The United States is a rich amalgamation of peoples, religions and cultures thanks to the immigrants from different parts of the world.  They brought with them their local ingredients as well as cooking styles with them.  Yet amidst all these varieties Chinese and Italian cuisines dominate. During the 18th and 19th centuries, the Americans developed a number of new foods.  What characterised the American cuisine is the adaptation of a fusion of multiple ethnic cooking styles. During this period food production and presentation became more industrialised. So here is the recipe:

Mini Mint Pavlova with Mango

Ingredients:

  • Dark chocolate chopped ½ cup
  • Desiccated coconut 3 tablespoons
  • Refined flour (maida) ½ cup
  • Melted butter ½ cup
  • Condensed milk ¼ cup
  • Milk ½ cup
  • Icing sugar ½ cup
  • Baking powder ½ teaspoon
  • Castor sugar (caster sugar) ¼ cup

Method:

  1. Preheat oven at 180ºC.
  2. Combine butter, condensed milk and milk in a bowl and whisk well. Sift icing sugar into it and whisk well.
  3. Sift together refined flour and baking powder into it and mix well. Add desiccated coconut and mix well into a smooth batter.
  4. Heat a non-stick pan. Add castor sugar and ½ teaspoon water and let the sugar melt completely.
  5. Melt the chocolate in a microwave for 1 minute. Remove from heat and whisk till smooth.
  6. Add melted chocolate to the pan, switch off heat and mix well. Transfer the chocolate mixture into another bowl.

  8. Place the moulds on a baking tray, put the tray in the preheated oven and bake for 20-25 minutes.
  9. Remove from oven and cool. Remove from moulds and serve.
