Cut 250 grams of chopped carrots, 1 thin sliced onion, 1/2 tsp grated ginger, 1 tbsp oil, 1/2 tsp pepper, 1/2 tsp roasted cumin powder, 1 tsp cinnamon powder, 1 tsp Turmeric powder, 1 pinch of saffron, 1 liter weightable stock, 3 tbsp rice, 1 tbsp lemon juice, 6 leaves of fresh mint, a little finely chopped pastry, a few finely chopped coriander leaves, 1 large tablespoon curd
To make carrot soup first, heat the olive oil in a vessel, when it gets heated properly, add chopped onion ginger and garlic and fry it. After that add carrot, paprika, cumin powder, cinnamon, turmeric powder and saffron and fry it. Now add vegetable stock and mix it well and cook for a while.
After that, add rice and cook it. When it gets cooked well, take out a little rice and keep it aside for decorating. Now add lemon juice, little mint leaves and half coriander leaves in it. Now put the mixture in a mixer and grind it and then put it in bowls. Take your carrot soup ready; decorate it with rice, mint, chapatelan, coriander leaves and curd and serve it.
